Cajun Chicken Quinoa Salad

Still undecided on what to eat for dinner tonight? Why not try this delicious Cajun Chicken Quinoa Salad?

Preparation time: 10 mins | Cooking Time: 15 | Serves: 6


  • 2 cups quinoa
  • 2 chicken breasts or 4 chicken thighs, cut into strips

  • 1 tbsp Natural cajun seasoning (MSG free)

  • ¼ cup Goji berries

  • ¼ cup sunflower seeds

  • 3 big handfuls of fresh rocket

  • A punnet of grape tomatoes, cut in half, or 4 small roma tomatoes

  • 1 small red onion, finely diced

  • ½ continental cucumber, diced

  • ½ cup feta cheese, cut into cubes

  • ¼ cup chopped walnuts

  • 1 tbsp olive oil

  • Juice of a freshly squeezed lemon

  • Himalayan sea salt and pepper


  1. Preheat the oven to 160 degrees Celcius.

  2. Cook the quinoa in 4 cups of water over a high heat for 15 minutes. Set aside to cool.

  3. Roll the chicken in the Cajun seasoning. Roast for 15 minutes.

  4. Mix all of the ingredients together in a large salad bowl. Drizzle with the olive oil and lemon juice and season to taste. 

  5. Enjoy!

Note: Quinoa is the only grain that hosts all of the essential amino acids in sufficient amounts to be determined a complete protein. This grain is very high in folate and essential minerals.
